Waikura- for local south Wairarapa Iwi this represents the red glow in the sky at dawn and dusk.

Fruit source: organically grown Gladstone vineyard. Predominantly clone 5, some 667 and Abel.
70% of the blend was hand picked and sorted into small stainless steel vats with CO2. These whole cluster vats were sealed and left to start by carbonic maceration. As ferment began punch down by foot or hand was made 1-2 times a day. These ferments went for between 10-14 days on skins and then the free run was transferred to tank.

The remaining 30% of the blend comes from saignée off Pinot Noir fermenters. It was cold settled and racked to neutral French oak barriques. Ambient natural ferment took place and these two components were combined and then put back to older French barriques for maturation for 3 months.
